Y'all use the Japanese name of characters, Pokemon and even attacks, but use "Saitokins" instead of "Saito-chan"?

We try to adapt honorifics whenever possible, yes. That's been the approach since we picked up Sun & Moon.

Why is that?

My understanding is Team Jojo requested omitted/adapted honorifics when Sun & Moon was first picked up for some degree of stylistic consistency across projects. I wasn't around at the time, though, so I don't know for sure.
