That's a pretty big question.

Basically, what's different is that my subs have someone (me) who goes though the episode and thinks hard about how to change the subtitles if they are presenting the story in an awkward or distracting way, and also about how to use the subtitles to accentuate what is interesting about the story. There is also someone (Unbased) who goes through and catches the relatively few TL mistakes Aniplex commits.

I'm sure that's not exactly helpful to someone trying to figure out what makes fansubs worth watching, but there are so many aspects of fansubbing that it's hard to be more specific.
